Vegan Banana Cake Recipe

Vegan Banana Cake Recipe

Preheat oven to 350°. Recipe makes 24 cupcakes or two round cake pans.

5 mashed bananas
1 cup brown sugar
1/2 cup raw sugar
1/2 cup earth balance
1/4 cup coconut oil melted
2 teaspoons vanilla

1/4 cup milk
2 tablespoons lemon juice
3/4 cup almond yogurt

2 cups white flour
1 cup whole wheat flour
1/8 teaspoon of nutmeg (Just a dash will do.)
1/4 teaspoon of cinnamon (A couple of dashes.)
2 teaspoons baking soda
1/2 teaspoons salt

In a small bowl mix milk, lemon juice and yogurt together and let sit for at least 15 minutes.

Mix dry ingredients together and set aside.

In a large bowl, cream mashed bananas, sugar, oil, margarine and vanilla.

Add milk mixture to the creamed banana mix and thoroughly blend together.

Add the dry mixture to the wet mix and blend well until smooth with no lumps at all.

Pour batter into greased cake pans or scoop into lined cupcake pans.

Bake at 350° for cakes about 35-40 minutes and cupcake 20-25 minutes or until a toothpick comes out clean.

Carrot Buttercream Recipe
3 1/2 cup powdered sugar
1/2 cup earth balance
1 tablespoon carrot juice
1 teaspoon vanilla

Using a whisk attachment on a stand mixer, whip the margarine. Then add sugar, vanilla and carrot juice. Whisk on high for a minute or two, until it becomes a bit fluffy. In a pinch store your frosting in a freezer bag and when you’re ready to frost cut the tip of a corner off to use it as a pipping bag.

Chocolate Peanut Butter Ganache Frosting Recipe
3.5 ounces 8o% chocolate
2 cups powdered sugar
1/2 cup peanut butter
1 teaspoon vanilla
2 tablespoons soy milk

Melt the chocolate with the milk, either in double boiler or microwave in 10 second increments until halfway melted then stirred until completely melted.

To the melted chocolate add the peanut butter and vanilla, mix well.

In a stand mixer with a whisk attachment add powder sugar to the chocolate mixture and mix until fully blended.

If preparing ahead of time, store in a ziplock bag and run under running warm water to get softer and easier to handle.

*This frosting does set and become fairly solid when chilled.

  2. this cake is absolutely amazing! the cake is formidable, almost like a banana bread but not as dense, sandwiched between two layers layers of frosting–the banana creme on top and the to-die-for chocolate peanut butter ganache between its layers. how to describe it in one bite?: bliss.

    I have not tried a Kerry & Josh creation that I haven’t liked yet, but this recipe is definitely my favorite.
